Haymans is one of our favourites, not just because of the delicious flavours, but the heritage of the brand and the locality. We love working closely with our suppliers and hearing their stories, especially when they are based just around the corner in Balham. The Hayman’s family have a great story…five generations of custodians of true English gin since the gin boom, they protect the classically balanced styles that lie at the heart of most classic gin cocktails. The gins are distilled just as they would have been over 150 years ago, using authentic period recipes and the traditional two-day distilling process. This is what gives their gins classically balanced style and why they are excellent for a gin cocktail.

Spring…into Spring with one of their perfect serves. An incredible seasonal tipple is the Rhubarb Collins made with their delicious Old Tom, so named after the tradition from the 18th century where plaques of a black cats were used to signal that you could buy gin when it wasn’t commonly ‘accepted’ to do so.

Haymans Rhubarb Collins 

  • 50ml Haymans Old Tom Gin
  • 25ml Lemon juice
  • 25ml Sugar syrup
  • 2 Bar spoons of Rhubarb jam

Step 1: Add all the ingredients into a cocktail shaker

Step 2: Shake all ingredients thoroughly

Step 3: Strain into a glass with ice

Step 4: Top with soda water

Step 5: Garnish with a lemon wheel

Here are our top tips for making the perfect jam including a sneaky trick to see if it’s ready…

Rhubarb jam

  • 4lbs of rhubarb cut into chunks
  • 4 cups granulated sugar
  • 1.5 cups of jam sugar
  • Juice of a lemon

Step 1: Place all the ingredients into a bowl and sit to rest for an hour

Step 2: Put a plate in the freezer (you will need this later)

Step 3: Put the mixture into a pan and bring to the boil, stir constantly for 15 minutes

Step 4: Reduce the heat to a simmer for a further 30 minutes, keep stiring to ensure the jam doesn’t burn

Step 5: Remove the plate from the freezer  and put a tea spoon of the jam on the plate, if the jam keeps its shape its ready, if it runs keep simmering for a bit more time and try the plate again

Step 6: When the jam is ready remove the lemon and put the jam in a clean jar

Enjoy on toast, porridge or join us in adding it to a delicious Haymans Gin cocktail.
